What is a wheat berry?
A whole wheat berry (also called a wheat berry or wheat kernel) is the complete, intact seed of the wheat plant—essentially the whole grain in its most unprocessed form, before any milling or refining happens.
The husk (outer inedible shell) is removed during harvesting, leaving the edible whole kernel behind. The wheat berry consists of three main parts, each contributing different nutrients, textures, and flavors when the grain is used whole (e.g., cooked as a grain) or ground into whole wheat flour.
Bran (outer layer) - fiber, B vitamins, iron, magnesium, zinc, antioxidants
Germ (or wheat germ) - healthy/oils, vitamin E, vitamin B, protein, minerals
Endosperm - carbs, protein, minerals
